One of the great delights I have each spring is digging leeks in my woods. They grow in great abundance and very large patches. The cooks in my area often gather wild leeks and serve them at church suppers in various dishes such as ham and leeks. Fire companies use these leek dinners for fundraisers too.
Leeks can be used as a subsitute for garlic or onions. I have even dehydrated the leaves to a powder and used like sage or other seasonings.
Punch up leeks on your search blank for many uses of leeks.

Another discovery that I made recently is dandelion tea.
I had gather dandelions to cook up for greens a few weeks ago. They were pretty tasty. It seems that we had use up all the teabags. And I drink several cups of tea each day. I noticed that the dandelions still had the cooking water in the refrigerator with a few greens left over.
Well why not try drinking that cooking water? I needed a drink of something cold. That dandelion tea was delicious! And it was satisfying too.
I hope to dig more of them today and make a meal of them. Some folks like them raw and just wilted down. Put a little melted butter and a little vinegar over them and you have a great salad
