I like sour dough pancakes.
All you need to do is let your batter set until it gets sour. If it gets too sour, just sprinkle a little baking soda in it and stirr it up as you would normally do.
Make your pancakes and then leave a little batter in your bowl for the next day. Cover it with a plate or towel and let it set on the table or counter.
I like mine thin with maple syrup or honey covering them. But sometimes I also like eggs sandwiched between a stack of 4 or 5 pancakes.

I'm not a fan of pancakes myself (prefer waffles), but do have sometimes for hubby. My 91 year old mother in law gets up and makes pan cakes every morning. My BIL stays with her and his wife comes later in the morning to feed cats at the barn and to eat breakfast. She can't understand the rest of us not eating pan cakes every day. She has had pan cakes for breakfast for as far as her memory goes back.

I like them every once in a while but not everyday lol. Just a little syrup though and I usually don't eat all mine lol. I do like eggs on top, sunny side up. Toast and pancakes are pretty close so getting the yolk on them aren't bad lol. I don't know about sour pancakes though. I guess its one of those things that's an aquired taste.
